Well, I plan my menus Sunday to Monday, that's what works best for me, but Menu Planning Monday sounds better. I have started planning breakfast and lunch as well, things seem to go smoother when I do it this way. Only once did my son out-and-out refuse to eat what was prepared, and he complained a little, but he sure did eat well at the next meal! So here goes :)
Sunday: Breakfast - Oatmeal with Bananas
Lunch - Sandwiches (I let them choose ham, cheese, or peanut butter and jelly)
Dinner - Honey Pork Tenderloin with mashed potatoes and carrots
Monday: Breakfast - Cereal with Strawberries (if cereal isn't on the menu at least once, I get asked for it every day. If I can show them "here it is, on Monday every week" then it's easier. Not to mention a perfect Monday food!) :)
Lunch - Chicken Nuggets with carrot sticks
Dinner - Bacon Wrapped Meatloaf Patties with rice (there's veggies hidden in the meatloaf)
Tuesday: Breakfast - Eggs with blueberries on the side
Lunch - Hot Dogs and apple slices
Dinner - Hamburgers and beets. Dinner every other Tuesday has to be simple, I have "step group" for church. More on that in another post.
Wednesday: Breakfast - Pancakes and more apple slices
Lunch - Fish Sticks and Broccoli
Dinner - Oven Fried Chicken with mashed potatoes and corn
Thursday: Breakfast - Oatmeal with berries
Lunch - Spaghettio-s (a cave. Actually lunch altogether is a cave lately, but at least they're eating, right?)
Dinner - Meat pies and string beans
Friday: Breakfast - French Toast and bananas
Lunch - Grilled Cheese and more apple slices (can someone give me another fruit to serve with lunch???)
Dinner - Make Parmesan-broccoli rice for church
Saturday: Breakfast - Bacon and Eggs (my family's favorite, and the easiest day to do it)
Lunch - Request - also easier to let them request on a Saturday, they feel happy they have a choice)
Dinner - Pizza and salad. I have been asked to make this a "regular"

I read through several of your posts this morning, including the budget one and thought I'd combine my comments on this post :-) You've inspired me to start up menu-planning again, which is something we used to do but got away from. I'll try to have something in a few days but if I don't, it'll be ready next Monday for sure. It's a lot more budget friendly than winging it and prevents wasteful small trips to the store. My husband grew up that way, so getting him to stop that habit has taken a lot of time. Now that our resources are so limited, it helps him see that my ideas aren't so bad ;-)
Like you I'm the healthy eater but have been stubborn about retraining the family's tastebuds, even if I have to sneak it into other foods. The alternative is eating poorly and I'm tired of us being more susceptible to illnesses and all sorts of behavioral issues. The kids' brains need good food, and I want them to develop habits from this early age that'll help them live healthy & strong. My husband's family & background is very different than this. I've set a boundary that we will increase our intake of better foods, and even the most reluctant child has started responding. I had to be firm initially and keep putting healthier choices into the mix of our meals. Sooner or later, as they begin to feel better they make the choices for themselves. That sounds like a great menu. My kids love SP O's. I say who cares balance it with a veggie or fruit.
